Pandan (pandanus amaryllifolius) is a tropical plant commonly used in Southeast Asian cooking, especially in desserts. Its long green leaves have a fragrant aroma and are often used for natural coloring.
It is a popular ingredient in making desserts, tea, and other dishes.
Some consider Pandan the Asian equivalent of vanilla, even though it doesn't taste or smell like vanilla. It is used to add fragrance to food.

Pandan Simple Syrup Ingredients
- Fresh Pandan Leaves. The key ingredient provides its distinctive flavor and unique aroma. Find fresh or frozen leaves at Asian supermarkets.
- Water. Used to extract the flavors and benefits of the pandan leaves.
- Sugar. You will be using an equal amount of sugar to an equal amount of liquid.
How to Make Pandan Syrup
1. Chop your pandan leaves into 2-inch pieces. Add the leaves and water to a food processor. Blitz until you have a nice green liquid.
2. Strain the liquid through a cheesecloth. Discard the pandan pulp.
3. In a small saucepan, add sugar and the pandan juice, whisk, and simmer on medium heat until the liquid becomes thick syrup.
4. Remove from the stove and allow to cool before use.
5. Store the syrup in a glass bottle with a lid and place it in a container in a dry location.
