Creamy coconut lime mojito is a sweet and tangy cocktail using white coconut rum, creme de coconut, fresh lime juice, and soda water. For this recipe, I added a Thai twist, using fresh kaffir lime leaves and fresh mint muddled in the cocktail shaker to extract flavors to add to the coconut mojitos. This is the drink of the summer!

The kaffir lime leaves simple syrup because I want to add a fun twist by infusing a Thai flavor into a classic mojito recipe. Kaffir lime leaves, a unique Thai ingredient, add a depth of flavor and aroma to this tropical cocktail. There are so many health benefits in using Thai herbs, not to mention the intense fragrance and aroma. If we enjoy some tasty cocktails, we might add a few healthy herbs to the drinks.

What are the Ingredients in a Creamy Coconut Lime Mojito?
Below are the key ingredients for making a creamy coconut lime mojito.
- White coconut rum. The better the quality of your rum, the better the flavor. Mine is from Trader Joe's, and it was fantastic for this recipe! Cream of coconut. This is not the same thing as the coconut cream. Find these in the dessert aisle or at your local liquor store, or buy them online here.
- Fresh lime juice. You can try using lemon juice as a substitute.
- Soda, tonic, or bubbly water. For fewer calories, I used bubbly water, and it tastes great!
- Garnish with mint leaves or favorite toppings like Thai basil, lemon/lime wedges, rosemary, ginger, or any fun tropical edible flowers or fruits!

- Fresh or frozen kaffir lime leaves. Use fresh or kaffir lime leaves. You can find kaffir lime leaves in the frozen section of your Asian market.
- Granulated white sugar. White sugar works best for making this simple syrup.

How To Make Creamy Coconut Lime Mojito
There are two parts to this mojito. One is how to make kaffir lime leaves with simple syrup. The second part is how to put the drink together. Let's get going! (:
STEP 1. Make the simple syrup by adding sugar, water, and kaffir lime leaves in a small saucepan. Turn the heat to medium and bring the mixture to a gentle boil. Whisk often until the sugar dissolves. Turn the heat off. Let the syrup cool.
STEP 2. In a tall cocktail glass, muddle 3-4 mint leaves and one large kaffir lime leaf. Add the ice, coconut rum, lime juice, kaffir lime simple syrup. Stir well with a stir stick.
STEP 3. Add the creme de coconut and stir well until you get a foamy drink. Sample the drink and adjust with more rum if necessary.
STEP 4. Pour club soda, tonic water, or bubbly water to top off the drink. Stir lightly one last time. That's it!
Take a sip, and adjust with more liquor, lime juice, or simple syrup. Garnish with your favorite ingredient, and enjoy!
