Glass noodle stir fry with leftover turkey meat is a light and delicious recipe. It's a great way to use your leftover turkey meat with a few of your favorite vegetables, and it's ready in less than 30 minutes!

Why This Recipe Works
You can use a variety of vegetables for this stir fry. Some of my favorites are snow pea pods, cabbage, sliced carrots, onions, jalapenos peppers, and so much more. The glass noodles soak up the sauce wonderfully and create such savory umami flavors! Using leftover turkey meat cuts your cooking time to at least 15 minutes!
Ingredients for glass noodles stir fry
Turkey meat. Use all parts of the turkey, like dark or white meat. Some skin is ok too. Use rotisserie chicken when it's not turkey season!
Glass noodles. They must soak in hot or warm water to soften before cooking.
Garlic. Minced into small pieces to use to make the sauce.
Lime juice. Lemon juice or rice vinegar can be used as a substitute
Oyster sauce. It gives the dish its savory umami flavor
Soy sauce. Any brand of soy sauce will work.
Fish sauce. Adjust as necessary with fish sauce. Go light, then add more later at the end.
Dark soy sauce. For the added brown color to the noodles. Molasses work great as a substitute.
Ground white pepper. Black pepper can be used as a substitute.
Sugar. Use white or brown sugar.
Carrot. Sliced or carrot chips are perfect for this.
Onion. Sweet onions are excellent.
Pea pods. Snow pea pods are a must, crunchy with a little sweetness.
Cabbage. Napa cabbage works great as a substitute.
Oil. Vegetable, canola, coconut, or avocado oil works great.
How to make glass noodles stir fry with leftover turkey meat
Step 1. Soak the dry noodles in hot water for 5 minutes, drain, and set aside. Step 2. Mix the sauce in a small bowl, and set aside.
Step 3. Heat a large pan on medium-high heat. Add oil. Once hot, add garlic and onion. Sauteed until lightly browned. Then add carrots and turkey meat, and cook for 2 minutes.
Step 4. Add cabbage and pea pods, stir, and cook for one minute or until the vegetables are tender.
Step 5. Add the glass noodles and cook for about 2 minutes until the noodles are soft. Stir often to mix all the ingredients.
Step 6. Add the sauce, stir well and cook for 1-2 more minutes. Taste and adjust with more soy sauce, sugar, lime juice, or white peppers! Done!
Garnishing options. Ground chili flakes, ground white pepper, and lime wedges. Enjoy!

- Use a combination of dark and white meat for extra flavors and texture.
- You can make the sauce ahead of time, stirring it up slightly before use.
- You can also cut up the vegetables ahead of time too. Cut and store in a separate container for cooking the next day.

Ingredients
- 6 oz turkey meat, shredded, or sliced into 2 inch pieces. Use all parts of the turkey, like dark or white meat and some skin is ok too.
- 5 oz dried glass noodles. Soak in hot or warm water to soften before cooking.
- 1 tablespoon garlic, minced
- ½ tablespoon lime juice
- 3 tablespoons oyster sauce
- ½ tablespoon soy sauce
- ½ tablespoon fish sauce. Go light, can add more later at the end if need more.
- 1 tablespoon dark soy sauce. For the added brown color to the noodles. Molasses work great as a substitute.
- ½ tablespoon ground white pepper
- 1 ½ tablespoon sugar
- ½ cup carrot, sliced into 1 inch pieces or use carrot chips.
- ½ cup onion, sliced into 1 inch pieces
- ½ cup pea pods.
- 1 cup cabbage.
- 2 tablespoon oil. Vegetable, canola, coconut, or avocado oil works great.
