Description
This delicious Thai fried rice with leftover turkey meat is a perfect way to come up with a new meal the next day or so after your big turkey day. Your whole family will love this delicious dish. It's not spicy, plus it's fast and easy to put together in a flash.
Ingredients
- 2 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon sweet dark soy sauce
- 1/2 tablespoon lime juice
- 1 1/2 tablespoon sugar
- 1/2-2 teaspoons ground white pepper
- 3 tablespoon oil, divided
- 2 eggs
- 1 1/2 tablespoon garlic
- 1/4 cup onion, diced
- 1/4 cup carrot, diced
- 6 oz turkey meat, slice into small pieces 1-2 inches long
- 2 1/2 cups rice
- 1/4 cup green onion
Instructions
- Make the sauce in a small bowl, and set aside.
- Whisk the eggs lightly in a small bowl
- Heat oil in a large wok, large skillet, or saute pan on medium-high heat. Once hot, add the lightly beaten eggs and scramble. Set aside.
- Add oil to the pan and garlic and onion, and cook, until lightly browned and fragrant.

- Add rice and spread it evenly on the wok, pan, or skillet to let moisture escape. Cook for 2-3 minutes. set aside
- Add veggies and stir.
- Add sauce to the rice mixture and stir well.
- Add turkey, stir, and be ready to serve. Garnish with green onions, lime wedges, and red pepper flakes.
Notes
- Portion and Freeze your leftover turkey in small amounts. When it's time to use it for a stir fry or other dishes, you can quickly thaw it and throw it in a recipe in a flash. Perfect for a quick weeknight dinner.
- Use day-old rice-cooked rice for making fried rice.
- If you don't have leftover rice, scoop out freshly made fried rice and spread it on a baking sheet or a large platter to let the rice dry. Leave at room temperature for an hour before cooking.
