Khanom Kluay (Thai Steamed Banana Dessert)

Description

Khanom Kluay is a traditional Thai steamed banana dessert made with ripe Nam Wa bananas, coconut milk, rice flour, and grated coconut. Soft, slightly chewy, and naturally full of banana flavor.


Ingredients

  • 1 pound very ripe Nam Wa bananas, peeled
  • 1/2 cup rice flour
  • 1/3 cup tapioca starch
  • 1/3 cup sugar
  • 1 can full-fat coconut milk, (13.5-ounce)
  • 1/4 teaspoon salt
  • 1 cup unsweetened shredded coconut, divided, save about ⅛ cup for topping
  • Optional: thinly sliced banana, for topping


Instructions

  1. Mash the bananas. Peel the ripe Nam Wa bananas and mash them well. They don't need to be completely smooth. I like leaving a few small pieces for texture.
  2. Make the batter. In a large bowl, combine the rice flour, tapioca starch, sugar, salt, and ⅞ cup shredded coconut. Slowly whisk in the coconut milk until there are no dry pockets of flour. Add the mashed bananas and mix well. 
  3. Fill the cups. Bring the water in your steamer to a boil. Lightly grease your heat-safe cups. Spoon in the banana mixture, leaving a little room at the top.
  4. Add the toppings. Top each cup with the remaining ⅛ cup shredded coconut over the tops. I also like adding a few thin pieces of banana so you can see what's inside. 
  5. Steam. Place the cups in the steamer and cover. Steam over medium-high heat for about 20–25 minutes, or until the centers are set. Insert a toothpick into the center. It should come out without wet batter.
  6. Cool and serve. Let the Khanom Kluay cool for about 10–15 minutes before serving. I like it best slightly warm or at room temperature when it's soft and chewy. Refrigerating makes the texture a little firmer.

Notes

  • Bananas: Very ripe Nam Wa bananas are best. Let them become soft and well spotted before using.
  • Shredded coconut. Freshly grated or frozen coconut is great, but unsweetened shredded coconut works well too.
  • Banana leaves: Optional. Small heat-safe cups or silicone molds work well.
  • Texture: Khanom Kluay is very soft when hot and becomes firmer and chewier as it cools.
