Butterfly Pea Flower Tea

Butterfly pea flower tea is a refreshing and beautiful blue drink made from a tropical flower, the butterfly pea flower is a tropical flower found throughout Thailand and South East Asia. This blue tea recipe is very simple to make, you only need 3 ingredients, and can be made in less than 15 minutes. 


  • 6 cups of hot water
  • 1/4 cup dried butterfly pea flowers.
  • 1 slice ginger, 2 inches long. Bruise lightly with the back of a knife for quick release of the oil.
  • Garnish options: Mint, Thai basil, lemon, or lime slices for garnishing
  • Ice, for the iced tea version


Using a French Press Method

  1. Combine dried butterfly pea flowers and ginger in a french press.
  2. Add hot water to the tea mixture and let it steep for 10 minutes. Use a spoon to whisk so all the flowers are mostly submerged.
  3. Plunge the french press then pour the hot tea into a teacup.
  4. Add sweetener and garnish of choice; sugar, honey, ginger, lemon/lime wedges, lemongrass, etc. Save the rest for iced tea and put it in the refrigerator.
  5. To drink as iced tea, let the blue tea cool completely before adding sweeter or garnish. 

On the  Stove Top 

  1. Combine dried butterfly pea flowers and ginger in a medium pot.
  2. Bring the tea to a boil, remove from the stop and let simmer for 5 minutes.
  3. Strain the tea mixture and discard the flowers and ginger.  
  4. Drink it hot with honey or any garnish of choice. For drinking as iced tea, let the tea cool completely. Drink the tea with ice and ad sweetener and top with your favorite garnish. Save the rest of the blue tea in the refrigerator.


  • You can use more for a deep blue color and less for a lighter shade of blue.
  • Garnishing ideas: Mint, lemongrass, kaffir lime leaves, rosemary, Thai basil, cucumbers slices, lemon, lime, oranges, peaches, nectarine and so much more!
  • Sugar. Use white, palm, coconut, or monk fruit sugar. Honey is a great option for this tea too.
  • Use ice cubed trays to store leftover tea for future uses! Such a fun and beautiful little trick!
