Description
Bacon wrapped grilled enoki mushrooms (with spicy Thai dipping sauce) are the perfect party appetizer to share with your guests. Prepare yourself for flavor explosions!
Ingredients
For the grill
- 1 pound thick-cut bacon, sliced in half
- 14-16 oz Enoki mushroom, roots trimmed, then separated into 1x1 inch clum for wrapping.
- 1-2 tablespoons oil for brushing the mushrooms on the grill
- 1 whole head of garlic, lightly crushed and sliced in half
- 1 hot chili pepper per wrap. Optional
For the Thai chili dipping sauce
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 1/2 tablespoons sugar
- 2 tablespoons water
- 3 tablespoon cilantro, chopped small
- 2 tablespoons garlic, minced
- 1/4 cup shallot, chopped small
Instructions
- Make the sauce by adding minced Thai chilis, garlic, shallot, cilantro, fish sauce, lime juice, sugar, and water. Set aside.
- Wash the mushrooms well with water. Cut the bottom part of the enoki mushrooms with a sharp knife and discard the root. Separate the clusters of the mushrooms into 1x1 inch pieces for wrapping.
- Start the wrapping process by combining the mushrooms, garlic, and chilis on top of a half-sliced piece of bacon. Roll the wrapped mushrooms tightly, then thread them through the skewers. Using 4-5 pieces of the mushrooms per skewer is best for keeping the grilling temperature evenly.
- Finish wrapping the mushrooms with the rest of the ingredients. Place them on a large rimmed baking sheet. You'll have yourself a beautifully wrapped bacon bouquet!
- Turn the grill to medium heat. Before grilling, brush a small amount of oil on the mushrooms to prevent them from burning on the grill. Do this on both sides of the mushrooms.
- Grill the mushrooms between 5-10 minutes per side on medium heat, depending on how well you like your mushroom. Grill a bit Longer if you like your food on the well-done side. That's it, enjoy! Placed the finished Enoki mushrooms on a serving platter and served with the sauce.
Notes
- Feel free to skip the crushed garlic or chilis in the wraps if you don't want these ingredients in your mushrooms.
- Add green onions, sliced shallots, or cilantro stems to increase the flavor!
- For a more charred taste on the mushroom, press the bacon part of the wrap with your tongs to squeeze out the bacon fat causing the flame to quickly charr the mushrooms.
- Bring plenty of paper towels with you when grilling the mushrooms. They are handy to have while grilling.
