2. Make the simple syrup with sugar, water, lemongrass, kaffir leaves and galangal.
3. Muddle the fresh herbs in a cocktail shaker.
4. Add the liquids and mice to the shaker.
5. Shake until cold to the touch. Pour the crispy cocktail into a glass of ice.
6. Garnish with fresh chilis, lime slices or kaffir lime leaves.
