A perfect summer curry! Light, easy and quick to put together.
2. Cook coconut milk until the oils and water separate.
3. Add the red curry paste to the pan and stir.
4. Season the curry with sugar, kaffir lime leaves and fish sauce.
5. Add the coconut milk to the pan with the curry paste.
6. Add the fish and the stock to the pan.
7. Season some more to taste.
DONE! Serve Jasmine rice, rice noodles or all on it's own. ENJOY!
