Thai Kabocha Squash  curry with chicken 

A creamy Thai curry full of delightful  flavors!

The perfect curry for fall and winter! 

1. Grab these simple ingredients

2. Cut the kabocha squash, scrape the seeds and fiber then cut into bite-sized pieces

3. Sauteed the garlic and shallot in a pot or dutch oven

4. Add the red curry paste and stir together well

5. Add the coconut milk and cook until you have a thick curry sauce

6. Add the chicken and kabocha squash and stir well

7. Add more coconut milk and cook until chicken is done and the kabocha is tender. DONE.
