Thai Eggplant Salad

A delicious and healthy Thai salad! 

A perfect summer  salad with fresh and aromatic herbs and spices!

1. Grab these simple ingredients

2. Grill the eggplants on the grill until charred and soft. 

 3. Remove the skin of the grilled eggplants and cut the meaty part into 2-3 inch pieces. 

 4. Chop the herbs, and add to a bowl. Add the eggplants, toasted rice powder 

4 . Season to taste with more lime juice, fish sauce and chili flakes.
